These are pictures from the April vegan potluck sponsored by Animal Outreach of Kansas. We meet at the Ecumenical Christian Ministries building near the University of Kansas campus. We have been attending the monthly potlucks for about year and a half. It is an diverse mix of ages, backgrounds, levels of advocacy and interests. It is nice to get together, talk about current events, share a great vegan meal, but mostly the energy of a group of people that share a philosophy of ethical eating and commitment to the welfare of animals.
Did I mention the great food!!! We meet at 6 pm and I am always rushing to put something together. I am always impressed with the amount of time and energy everyone puts into preparing food. I do think that we all get plenty to eat, this is our opportunity to celebrate the abundance in our lives!!!
You might search in your area to see if there are any groups in your area that sponsor vegan potlucks, it is a great way to meet really nice people and share good food. If you are just exploring veganism it is a great place to make connections, learn some of the tricks, and hear the ups and downs of veganism.
This month we had:
Green beans, red peppers, almonds and rice.
Asparagus, portabellas, and apples.
I made tofu salad, with roasted tofu, onions, celery, carrots and veganaise.
There were also several fresh salads and some really good chocolate cookies with white chocolate chips.
