This was a simple cashew cream, with garlic over linguine, with broccoli and garlic bread.
Yes.... there is a good chance that most of our meals will have broccoli this time of year..... and pasta.... or potatoes....
This is how I made the sauce:
2 medium white potatoes, rough diced
1/2 white onion
4 teeth garlic
1/4 cup raw cashews
2 tablespoons vegan margarine
1/4 teaspoon salt
1/4 teaspoon liquid smoke
1 cup water
Put all of the above in a pan and cook until until the potatoes are soft, then put in vita mix/blender and process until smooth and creamy. Pour over your favorite pasta
