Korma Sutra + Seitan Wraps

We have made it a few days into the New Year and even though there is more free time my efforts to stay on top of photos of the food we are eating and keeping the blog up to date have not gone so well. Even though I have really enjoyed all of the time with family and friends I am ready to get back to our routine!!!!!
Yesterday we went to Korma Sutra for the lunch buffet. We have not been there in a while because it is a bit of a drive. Nikki loves Indian food, but the local places do not have much available for vegans on their buffets. The owner of Korma Sutra is extremely helpful in pointing out vegan options on the buffet. Then he took it upon himself to get us vegan roti, mango juice and a vegan rice dish made fresh. It was really good, I wish I would have taken pictures, but it looked and smelled too good to stop. WE WILL HAVE TO GO BACK.

Today was another slow paced day, we went to a couple of book stores and then on a whim decided to stop at the store and get stuff for dinner. We went to the Merc to get stuff to make wraps.
We got the following because Nikki remembered a veggie wrap she used to get years ago.
  • White Wave seitan, pan seared with garlic, ginger, and onion powder
  • Carrots
  • Green Pepper
  • Cucumber
  • Romaine
  • Spinach Wrappers
  • Prepared peanut sauce
The wraps turned out really good, as you can see. They were light and tasty we will definitely do these again.
