George Foreman Tofu


I have tried many ways cooking tofu, the challenge is getting the texture right. I like it to have a chewy outside and tender inside. But most importantly it has to taste good!!!!!
There are many ways to achieve this, but the challenge is not to use a ton of oil. Fried tofu is awesome but it will take on 2/3 of a cup of oil per pound of tofu. So usually I use one of two methods, first is to cube the tofu and mix in a bowl with a couple of teaspoons of oil with spices, and bake at 375 for about 20 min,
or I will marinate and cook in the George Foreman grill.
Here's what it takes:
Marinade - process in the blender
  • Fresh ginger
  • Fresh garlic
  • Soy sauce
  • Oil - teaspoon
Tofu - cut in 1/2 inch thick slices
Marinate the tofu for about half an hour, then grill for about 15 minute, brush with marinade.
I usually cook two pounds of tofu so there is left over tofu, which is awesome on salads, sandwiches, tacos, or by themselves.


Served with instant brown rice and steamed broccoli, I take a cup or so of the marinade and added a teaspoon of corn starch then heated in microwave until thickened, serve on top. This meal took about 40 minutes.

Early Spring Broccoli Tofu Rut!!!!!

I have been looking through old posts and man we eat massive amounts of broccoli. I think this is the case because it is the only veggie that Carter really likes other than edamame. But low and behold on this day not only did we have broccoli, we also had tofu and edamame, yes I know it is a bit redundant. To shake things up I added snow peas.
This was pretty basic set up:
Tofu in the Foreman Grill
Broccoli pre steamed in mircowave
Stir fried peas, edamame, garlic, and broccoli, then added a 1/2 cup of water, 2 tablespoons of soy sauce, and stired in 1 tablespoon of peanut butter, and a handful of peanuts. We served this over instant brown rice. The whole preparation time was about 20 min.
It will be interesting to look back in a year and see what we have eaten and identify trends. If anyone has a suggestion for something they would like to see me cook please let me know.

Lighten up!!!! Roasted veggies and brown rice!!!!

Well this is a a quick and easy dinner, theoretically, but I find that really it takes just as long as everything else. I am able to clean up most of the dishes while everything is in the oven, so clean up is not as much!!!
This was a very basic roasted veggies and tofu:
Red potatoes
Sweet Potatoes
Onions
Mushrooms
Poblano chilis
Tofu
Once everything is chopped I place in a big metal bowl and add 2 teaspoons of vegetable oil, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder, then mix. Bake on parchment for 20 minutes at 400 degrees
I made some instant brown rice and served with soy sauce and chili sauce. This is a light but filling dinner that covers all of the nutritional bases!!! Plus roasting anything makes the whole house smell good.

Taco Night Quick Style


Did a crazy thing, went to the store on a Friday night! Had a list and got the shopping done in 45 minutes, basically ran through the store throwing things in the cart, but we were out of food. I usually go on Saturdays and the whole process takes an hour and a half.
I was hungry going in so I probably got more stuff than we needed, so hopefully we will have some exciting posts this week!!!!
We got home around 5:30, put the groceries away, Thanks Nikki and Addison. I was thinking tacos, fajita style... cut up half and onion, a green pepper, and put some Morningstar Farms Chic'n strips, placed in a roasting pan with a touch of oil, salt, cumin, onion powder, and garlic powder. Placed under the broiler until browned about 10 minutes.
Made instant brown rice, added Taco Bell hot sauce, yeah that's right the little packets, what can I say it makes good spanish rice.
Warmed up flour tortillas in the big pan, with Follow Your Heart Jack Cheese, and pinto beans. Added jalapenos, green onions, Toffuti sour cream, rice, and some rotel.
The tacos were good and fast!!!!!! I ate a couple too many though.
Avocados were on sale at the store but they were not ripe yet so I will be adding them so something later in the week.
