Oh the tacos you will know...
We actually have not had tacos in a while, have to have a change in scenery once and a while. We tend to eat quite a few tacos in the summer time because of the great local produce.
Nikki ordered some seitan from Vegan Essentials and I thought that would be a good use for our first package. I like seitan because it has a solid texture, the problem is that it tends to be a bit squeaky, in that it squeaks on your teeth when you are chewing. The Upton's Natural was pretty basic and and tasted good, and not too squeaky!!! I pan sauteed it with a bit of oil, garlic powder and salt. For the rest of the fajitas I made simple guacamole:
1 avocado + puree of 1/4 onion, 1 tooth of garlic, and 1/2 cup water.
White rice, pinto beans, red salsa, and oven roasted poblanos, white onion, and red peppers.
