Wow the holidays are not the easiest time to eat right. This was our fourth Vegan Christmas!!! We generally we eat pretty healthful, and are fairly moderate in the amount we eat so the shock of all of the heavy holiday foods really weighed us down. In addition to fattier foods than normal we have eaten out quite a bit more with all of the hustle and bustle of December. This miso soup was the first light meal we have had in a few weeks.
What a simple and delicious meal, here's what it took:
1 white onion sliced
1 teaspoon olive oil
1/2 pound tofu nigari small diced
Brown onions then add tofu and let brown until the tofu sticks to the bottom of the pan.
Add and simmer until hot:
2 tablespoons red miso
1 tablespoon no chick bouillon
1 tablespoon soy sauce
1 teaspoon garlic powder
1 teaspoon ginger powder
4 cups of water
4 cups rough chopped fresh kale
Serve with red chili garlic sauce
This should only take about 15 to 20 minutes to make. This is a light broth with a small amount of oil, yet it fills you up nicely.
