Vegan Soyrizo and Tofu Frittata

I have always liked frittatas, but like many things I assume that they will take longer to prepare than they do!!!


This was a pretty simple recipe.
1 bag of frozen shredded hash browns (the loose ones not the patties)
  • 1 lb Nigari Tofu -crumbled
  • 1/2 white onion diced
  • 1/2 cup corn (frozen/fresh/can)
  • 1/2 of a Melissas Soyrizo
  • 1/4 teaspoon Paprika
  • 1 tablespoon of corn or potato starch
  • 1 teaspoon veggie oil - for the pan
Mix the ingredients above in a large bowl, put oil in a large non stick skillet (mine is a 18" Professional Volrath).  Cook on first side until browned, remove to a plate - and flip.  Put the frittata in a 350 degree oven for about 20 minutes.
Cut the frittata in triangles and serve with salsa, green onions, Tofutti sour cream and jalapenos.  This would also be good with some black beans and tortillas!!!














Oh yeah....  dogs like frittatas....  give them a little bite!!!

K - I use firm tofu nigari(this kind that is packed in liquid). I do not try to squeeze out the liquid, I add cornstarch or potato starch to deal with any excess liquid.

I tried this recipe but had trouble getting it to brown and flip. Nevertheless, I threw it all in a baking dish, topped with a little vegan cheese. It was delicious. Served with sour cream, pick de gallo, on top of tostadas. Tis would be great for a brunch or pot luck.
